Quick, Creamy, Healthy Avo Pasta

Yummy! Combine avocado with some leftover pasta, sooo delicious, so quick and nutritious.



Switch tomatoes with other fresh veggies from home, or add something additional. Get creative!

Ingredients:

  • 150g pasta

  • 1 handful dried tomatoes

  • 1 handful of cashews

  • 1 handful basil, fresh

  • 1 large avocado

  • 1 tbsp of plant milk (oat, cashew)

  • 2-3 tbsp lemon juice

  • 1-2 tbsp soy sauce

  • 1 tbsp olive oil

  • 1 clove garlic (only if you don't have too many postpartum visits afterwards ;)

  • salt and pepper for taste

  • Add a few tbsps of water, if too thick.


First, bring water to boil and put in pasta according to package. Mash the avocado flesh with a fork and add 1 tbsp of plant milk. Add olive oil and lemon juice. Slice up tomatoes and basil and put them in a bowl. Take one tbsp of olive oil from dried tomatoes and sauté cashews until they are brownish. Grate garlic, ad to avocado mash, add cashews and drain pasta. Place pasta back in the pot, then add the avocado sauce and all the ingredients. Stir on medium heat, and serve with some pepper and salt, and some drops of soy sauce.
